If you’re travelling this summer to Florence Italy, and you’re looking for an authentic culinary experience, try tripe. It’s served by some of the city’s best restaurants. But you don’t have to dine there. Just visit one of the outdoor tripe vendors – the “trippaio”. The locals swear by them.
